Happy Birthday Abby - Part 2

So, my little girl turn three last weekend. And the only thing she asked for her birthday was a Princess and the Frog birthday party. She didn't ask for any particular presents, just a Princess and the Frog party. And so, began the challenge. I vowed a few years ago, that I wanted to make my children's birthday cakes myself--regardless of the challenges that they presented. Until now, the vow hasn't been too hard to fulfill as Wilton has great "character" cake pans that have fit our needs.., again, Until NOW. Abby wanted a Princess and the Frog Cake and there wasn't a Princess and the Frog pan...so I had to come up with my own creation. That would be challenge #1. Challenge #2: on Thursday, I ended up in the ER with an Ear Infection...an ear infection that 4 days later (and 4 days with little sleep mind you) is still throbbing . Thankfully, my brother and sister-in-law lived near a party store so they were able to pick the party supplies for me. So, despite not feeling the best, yesterday I persevered to make her cake. The first one crashed and burned (well, not literally, but fell apart popping it out of the pan). I decided to temporarily give up and go to my parents last night where at least if I could get the cake to pop then I wouldn't have to worry about transporting it in the heat. Challenge #3: We had an unbelievable storm last night as I was going to Michael's to get the icing coloring. By the time the storm was over, the store was closed. So this am, I had to run to Wal-mart and purchase the closest colors I could find. Challenge #4: Exhausted, I had never done a tiered cake before and the icing didn't want to cooperate. My dad kept trying to reassure me that the plain white cake was enough. No, I couldn't listen...Abby wanted a Princess and the Frog cake so that is what she was going to get. Fast forward to Challenge #5...so I finished the cake and placed it in my parents refrigerator until the party. When I went down to retrieve it, there were finger-swooshes thru the icing! One of my children had decided to "test" the cake before the party. Luckily, I was able to fix most of the damage. So, all in all, this cake is more than a birthday cake! It was a challenge: to my creativity, my perseverance, and my coping and parenting skills. BUT, all being said and done, the look on Abby's face made it all worth it!
